Under his vision and direction, these birds are raised in semi-captivity, in an environment that replicates their natural habitat, where they have remained for a minimum of six months. The natural feeding and the ideal ecosystem conditions on the farm, personally supervised by Patxi Garmendia, allow these partridges to fully develop their hunting and gastronomic qualities, making them famous in both areas.
