VINIFICATION: The grapes pass through the selection table, are destemmed and crushed very lightly. Their maceration lasts 10 to 12 days.
Alcoholic fermentation lasts between 12-15 days.
Next, malolactic fermentation takes place in 50% new French and 50% new American oak barrels.
AGEING: It takes place in French and American oak barrels for 24 months.
Next, bottle aging for 2 years (bottle aging involves an evolution and refinement of the wine. Over time, it can lead to dregs, precipitates or sediments appearing in the bottles).
CONSUMPTION TEMPERATURE: between 16º and 18ºC.
DECANTATION: Due to the natural nature of the production, precipitates may appear in the wine, since it is not subjected to any clarification or stabilization process.
CATA'S NOTES
Cherry red color with blue reflections.
Very intense. Aromas of ripe black fruit (prunes), roasted (coffee and tobacco).
Wine with expressive tannicity, fresh, balanced and silky. Notes of fruit in liquor, toast, tobacco, coffee and cocoa.
