The Wagyu dam is a very particular piece, shaped like a high loin, but smaller. It is moldable to be prepared in various dishes and turns out to be a key piece for preparing scallops.
This meat is a very energetic food and rich in proteins. Likewise, it contains omega-3 fatty acids, which help reduce blood cholesterol levels. In the same way, it contributes to the presence of unsaturated fats that prevent cardiovascular diseases. And they help regulate blood circulation.

At Finca Santa Rosalía we like the Wagyu dam because it leaves no one indifferent. It comes prepared in a skin tray with an approximate weight of 250/300 grams; ideal amount for one person. It has the advantage of being vacuum packed, which helps it to be preserved for up to 40 days. In addition, it is an allergen-free food.
It is advisable to leave it at room temperature outside the container, at least 1 or 2 hours before cooking. Regarding the ways to prepare it, you can choose between: the grill, the griddle or back and forth in the pan. It is a meat with very good tenderness that does not need accompaniment, but if you want to include it, you can do it with fresh vegetables from our garden. They are all good and will help it become a very complete and nutritious dish.
