VINIFICATION: The grapes pass through the selection table, are destemmed and crushed very lightly. Their maceration lasts 10 to 12 days.
Alcoholic fermentation lasts between 12-15 days.
Next, malolactic fermentation takes place in new French oak barrels.
AGEING: It takes place in French oak barrels for 24 months.
Next, bottle aging for 2 years (bottle aging implies an evolution and refinement of the wine.
CONSUMPTION TEMPERATURE: between 16º and 18ºC.
DECANTATION: Due to the natural nature of the production, precipitates may appear in the wine, since it is not subjected to any clarification or stabilization process.
CATA'S NOTES
Balanced and silky wine. Fruit notes in liquor, coffee, tobacco and cocoa.
